What is ‘Nduja Sausage?

Originating from the sun-kissed Calabrian region of Southern Italy, this spreadable pork sausage stands as both a delicacy and a cornerstone of charcuterie. ‘Nduja — pronounced and-do-ya — boasts an abundance of flavour, rich texture, and a vibrant crimson hue. It shares a close kinship with sobrassada, its Spanish counterpart.

While paprika imbues sobrassada and chorizo with their characteristic redness, ‘nduja gets its fiery tint from sun-dried Calabrian chili peppers. This infusion not only imparts the signature colour but also gives ‘nduja its characteristic kick, making it a must-have for lovers of spicy cuisine.

This sausage likely originated as “peasant food,” utilising cheap, fatty pork cuts like jowl, belly, and shoulder, along with organ meats, due to affordability and availability constraints. The challenge was to render it palatable, leading to the creation of ‘nduja.

Through seasoning, spice, and curing, meat can undergo a remarkable transformation. In the case of ‘nduja, Calabrian chiles play a key role, constituting up to 30% of the sausage’s weight. After the sausage is prepared, it’s fermented, which is the final step in crafting the standout flavour of ‘nduja. As a result, it’s a bit more sour than other varieties of salumi.

These days most ‘nduja sausage is made with pork meat and pork fat, herbs, spices and local Calabrian chillies.

It’s intriguing how many of our beloved delicacies share a similar humble origin story. Despite its current status as a specialty product, especially outside Italy where it can be quite expensive, ‘nduja began as a far cry from its current stature.

Where To Buy ‘Nduja Sausage

’Nduja has become increasingly popular both with home chefs and restaurants which increases availability, though you may still be hard-pressed to find it at your big box grocery stores. Instead, look at small specialty markets, gourmet food stores, farmer’s markets, deli and specialty Italian grocers.

You could use sobrassada, soft chorizo, or another spreadable, spicy sausage as a ‘nduja substitute.

How To Use ’Nduja

There are so many tasty ways to use this spicy sausage. It can act as the main character in a dish, it plays well with others, and it’s an underrated condiment. If you want to get familiar and creative with using it, think of it like a chili-garlic crisp or miso paste. These ingredients pack a ton of flavour in a small serving and meld beautifully into so many dishes.

‘Nduja is soft and will literally melt when it comes in contact with heat, so you could infuse nearly anything with it. It’s probably most popular as a pizza topping and trust me, a little bit goes a long way! You can also make a tasty ‘nduja butter to spread on grilled meats and seafoods. Add a little to ground meat to make amazing ‘nduja sausage rolls with hot honey. Stir it through tomato pasta for a tangy, spicy kick. Try it out with some ricotta on bruschetta. You can even make a vegan ‘nduja paste to spread on toast or stir into roasted potatoes.

Storage Tips

Unopened ‘nduja sausage can last for quite a while due to its high-fat content and fermentation process. Here’s a general guide:

  • Room Temperature: If it’s a whole, cured ‘nduja sausage and hasn’t been opened, it can last at room temperature for several months. Just make sure it’s stored in a cool, dry place away from direct sunlight.
  • Refrigeration: If you’re storing it in the fridge, an unopened ‘nduja can last even longer—up to 6-12 months.

Once opened, keep ‘nduja in an airtight container or wrap it tightly in plastic wrap and store it in the fridge. It should last for about 3-4 weeks.

For longer storage, you can freeze ‘nduja. Portion it into smaller amounts, wrap them well, and place them in a freezer-safe container or bag. It can last for up to 6 months in the freezer. Just thaw it in the fridge before use.
