This caramel apple cobbler is your next go-to dessert, especially during apple season. It features thinly sliced Granny Smith or Honeycrisp apples, warmly spiced with cinnamon, nutmeg, and ginger, and topped with a beautifully golden cobbler crust. The sweet crunch of the crust paired with the soft, caramel-drenched apples creates a delightful texture contrast.

Let me tell you, this is as comforting as the best apple pie you’ve had but with those caramel, butterscotch notes. Its comforting flavour profile, contrast of textures and the joy it brings to the table are why this apple cobbler recipe is a recurring favourite! This definitely falls into my comfort food recipes category, rather than a healthy one.

PS. Haven’t tried a cobbler before? It’s a rustic, fruit-filled dessert (similar to crisp or crumble) with a bubbly fruit filling and a buttery, biscuit-like topping. It’s like a pie but without the fuss of a traditional crust.

You will love the cozy flavors of fall with this caramel apple cobbler! It's packed with tart apples and gooey caramel, all tucked under a crispy topping. Perfect for a chilly evening, this cobbler will warm your kitchen and your spirit with its sweet, spiced goodness. Just add a scoop of ice cream!

Ingredients

For the Filling:

  • 6 medium apples Granny Smith or Honeycrisp, peeled, cored, and thinly sliced
  • ½ cup brown sugar 3.5 oz, 100 grams
  • ¼ cup granulated sugar 2 oz, 50 grams
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground ginger
  • ¼ cup butter 2 oz, 60 grams
  • ¼ cup caramel sauce 60 ml

For the Cobbler Topping:

  • 1 cup all-purpose flour 5 oz, 130 grams
  • ½ cup granulated sugar 4 oz, 100 grams
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup cold butter cubed (115 grams)
  • ½ cup milk 120 ml
  • 1 egg
  • 1 teaspoon vanilla extract
  • Additional granulated sugar for sprinkling
  • Additional caramel for drizzling

Instructions

  • Preheat the oven to 350°F (180°C) and grease a large baking dish (approximately 9×13 inches).
  • In a large skillet, melt the butter over medium heat. Add the apples, brown sugar, granulated sugar, cinnamon, nutmeg, and ginger. Cook for 5-7 minutes until the apples are slightly tender.
  • Pour the apple mixture into the prepared baking dish. Drizzle evenly with the caramel sauce.
  • In a large bowl, mix the flour, sugar, baking powder, and salt.
  • Add the cold butter and mix with a pastry cutter or fork until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the egg, milk, and vanilla extract. Stir this mixture into the dry ingredients, mixing until just combined, but do not overmix.
  • Using a spoon, drop the cobbler mixture over the apples, spreading it out evenly. It's okay if it doesn't cover the entire filling. Sprinkle a little granulated sugar over the topping for a crispy, golden finish.
  • Bake for 35-40 minutes or until the topping is golden and crispy. Allow to cool slightly before serving.
  • Drizzle with more caramel just before taking pictures, letting it drip down the sides for an attractive visual effect.
  • Serve with vanilla ice cream, enjoy!

  • For a nuttier flavor, add chopped pecans to the topping.
  • Make it festive with a dash of apple pie spice in place of individual spices.

Make This Cobbler Gluten-Free

Flour Substitute: Use a gluten-free flour blend in place of all-purpose flour. Make sure it includes xanthan gum or add 1/2 teaspoon of xanthan gum per cup of gluten-free flour to help with texture.
Baking Powder: Check that your baking powder is gluten-free or make your own with 1 part baking soda, 2 parts cream of tartar, and 2 parts arrowroot or cornstarch.
Texture: Gluten-free flours can sometimes result in a slightly different texture. Adding a bit of almond flour or oat flour to the mix can enhance the taste and texture.
Adjustments: Gluten-free flours may absorb liquids differently. Adjust the amount of milk slightly if needed to achieve the right batter consistency.
