Oh, cottage cheese egg bites are such a great little meal hack! Whether you’re in need high-protein breakfast or a quick grab-and-go snack, these healthy egg bites really deliver.

With a smooth, creamy texture and savory, cheesy flavor, these baked egg bites have less of an “eggy” taste than traditional egg muffins. Inspired by Starbucks egg bites, these get a boost of protein from cottage cheese, plus extra flavor from Cheddar and optional add-ins like ham, mushrooms, or cherry tomatoes.

You can bake them right in a muffin tin (silicone is best!), making them perfect for easy meal prep and even quicker mornings. Bonus: kids love these egg bites.

  • Preheat oven to 350°F (175°C) and lightly grease a muffin tin (silicone is best for these).

  • Busy mornings: I often make these in the mornings, even when I am in a rush. While the oven is preheating, I will blend the mixture and pour it into the silicone muffin tin. I have my coffee at the same time. While the egg bites are baking, I jump in the shower and get ready (they take about 15-20 minutes). Once they are ready, you can have them at home or pop a few in a container to have on the go.

For a quick, high-protein breakfast or snack, these baked cottage cheese egg bites are just what you need! Creamy, customizable, and made right at home, they’ll be a new favorite. Below recipe is for 2 servings but it’s easy to halve or double.

Ingredients 

  • 4 large eggs
  • ¼ teaspoon salt
  • cup cottage cheese 4 oz (110 grams, I used high-protein cottage cheese by Bulla)
  • cup grated Cheddar cheese 1.5 oz (40 grams)
  • 1.5 oz diced ham 35-40 grams, you could use bacon
  • 1.5 tablespoons chopped spring onions scallions

Instructions

  • Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray. I recommend using silicone muffin tin if you have one, as the egg bites come out more easily.
  • In a blender, blend the eggs, salt, cottage cheese, and Cheddar until smooth. You could also use a tall jug and a hand blender/immersion stick, a food processor or whisk by hand (note, the texture will not be as smooth).
  • Pour the mixture into the muffin cups, filling each about halfway or two-thirds.
  • Add diced ham and green onions to each cup and stir to combine.
  • Bake for 20 minutes or until set and golden. They should feel bouncy to touch.
  • Remove from the oven and allow the bites to cool for a few minutes before removing from the tin.

Storage tips: Store these homemade egg bites in the fridge for up to 3 days or freeze for up to 2 months. Just reheat in the microwave or oven as needed!
Meal prep: Prepare the egg mixture a day ahead and store in the fridge, or bake and store the egg bites in the fridge or freezer. They’re perfect for quick breakfasts and snacks!
Swaps: Diced veggies like mushrooms or tomatoes, or cooked sausage, are delicious in these baked cottage cheese egg bites.
Do I have to use a blender? Blending gives a smoother texture, but you can whisk the mixture for a chunkier, more rustic feel.
How do I make these less eggy? The cottage cheese and Cheddar make these less eggy, but you can also add a dash of milk to further mellow the flavor.
