I have my coffee at the same time. While the egg bites are baking, I jump in the shower and get ready (they take about 15-20 minutes). Ingredients
- 4 large eggs
- ¼ teaspoon salt
- ⅓ cup cottage cheese 4 oz (110 grams, I used high-protein cottage cheese by Bulla)
- ⅓ cup grated Cheddar cheese 1.5 oz (40 grams)
- 1.5 oz diced ham 35-40 grams, you could use bacon
- 1.5 tablespoons chopped spring onions scallions
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray. I recommend using silicone muffin tin if you have one, as the egg bites come out more easily.
- In a blender, blend the eggs, salt, cottage cheese, and Cheddar until smooth. You could also use a tall jug and a hand blender/immersion stick, a food processor or whisk by hand (note, the texture will not be as smooth).
- Pour the mixture into the muffin cups, filling each about halfway or two-thirds.
- Add diced ham and green onions to each cup and stir to combine.
- Bake for 20 minutes or until set and golden. They should feel bouncy to touch.
- Remove from the oven and allow the bites to cool for a few minutes before removing from the tin.
