Ingredients 

  • 2 Lebanese cucumbers halved and diced
  • 4 medium tomatoes sliced into wedges
  • ¼ large red onion sliced thinly
  • ½ cup crumbled feta cheese Greek or Danish

For the dressing:

  • 1 tablespoon white wine vinegar red wine vinegar works too
  • 2.5 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

To garnish (optional):

  • Fresh parsley or oregano
