Need an easy veggie side? This garlic lemon asparagus has your back with fresh lemon zest, garlic, and a little olive oil for a fresh and zesty boost in minutes!

Ingredients 

  • 12 oz asparagus 350 grams, ends trimmed
  • 1.5 tablespoons olive oil
  • 4 cloves garlic finely diced
  • Zest of ½ lemon
  • ½ teaspoon salt
  • A pinch of pepper
  • 1 tablespoon lemon juice about ½ lemon

Instructions

  • Wash asparagus and trim tough ends. Pat dry with a towel.
  • Heat 1.5 tablespoons of olive oil in a large sauté pan over medium-high heat.
  • Add the asparagus in a single layer. Cover with a lid and cook for 1 minute.
  • After 1 minute, remove the lid, flip the asparagus, and cover again. Cook for another 1 minute.
  • Remove the lid, add garlic, lemon zest, salt, and pepper. Stir and cook for 1-2 minutes until garlic is fragrant.
  • Finish with a drizzle of lemon juice. Stir and serve warm.

Storage tips: Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently on the stove for best texture. Freezing is not recommended as it may alter the asparagus texture.
Make-Ahead Tips: Trim and prep the asparagus ahead of time, storing it in the fridge in a sealed container. You can also zest and juice the lemon a few hours ahead to save time!
Can I use frozen asparagus? Fresh works best, but you could use frozen in a pinch—just cook a bit longer for thawing.
