I love a good taco bowl, but I got a bit tired of rice being the default base, so these ground beef taco bowls go with crispy roasted potatoes instead.

The beef is cooked with tomato paste, chipotle, and spices so that it turns saucy and slightly sticky rather than dry and crumbly — that’s the part I really care about getting right. The chunky fresh salsa cuts through all that richness, and a scoop of sour cream and cheese finishes it off properly.

What I really like about this one is that both the potatoes and the beef can be made ahead, so on a busy night or for lunch, you’re just reheating and assembling. It’s high in protein, naturally gluten-free, and the kind of meal that keeps everyone at the table happy, from picky eaters to people who want to pile on the chipotle.

For the potatoes

  • White potatoes — cut into small cubes so they roast quickly and get plenty of crispy edges
  • Vegeta stock powder seasoning — an all-purpose Eastern European seasoning blend; see the notes below for a substitute if you can’t find it
  • Smoked paprika, garlic powder, salt and olive oil

  • Lean ground beef (mince) — leaner beef works well here since the sauce adds plenty of richness

How To Make Ground Beef Taco Bowls

Find the full recipe and nutritional information below. Here are some handy step-by-step notes for how to make these ground beef taco bowls.

  • Roast the potatoes. Preheat the oven to 200°C / 400°F. Lightly oil a flat baking tray. Toss the cubed potatoes with olive oil, Vegeta, smoked paprika, garlic powder and salt until well coated, then spread them out in a single layer. Roast undisturbed for 25 minutes, then scrape them off the tray with a flat spatula and set aside.

  • Cook the taco meat. While the potatoes roast, heat oil in a skillet over medium heat. Add the onion and salt, and cook for about 5 minutes until soft and golden. Add the garlic and beef, bump the heat up to medium-high, and break the beef apart as it cooks for 4–5 minutes, until it’s changed color and released its juices.
  • Build the sauce. Stir in the tomato paste, chipotle in adobo, cumin, smoked paprika, oregano, pepper and the pinch of sugar if using. Pour in the stock, bring to a simmer, and cook uncovered until the liquid reduces and clings to the beef — you want it glossy and a little sticky, not dried out.

  • Make the salsa. While the beef simmers, chop and combine the tomato, capsicum, red onion and cilantro with the salt, sugar and lime juice. Toss and set aside.

Start each bowl with a scoop of roasted potatoes, top with the saucy beef, and add a handful of lettuce on the side. Finish with grated cheese, a dollop of sour cream, and a generous spoonful of chunky salsa.

For the potatoes

  • 1.3–1.5 lbs white potatoes cut into small cubes, 600–700 grams
  • 1 teaspoon Vegeta stock powder seasoning see notes for a substitute
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • teaspoon salt
  • 1 tablespoon olive oil

For the ground beef taco meat

  • 1 tablespoon olive oil
  • 1 onion finely diced
  • 1 teaspoon salt
  • 3 garlic cloves minced
  • 1 lb lean ground beef mince, 500 grams
  • teaspoons ground cumin
  • teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • 2 tablespoons tomato paste
  • teaspoons diced chipotle in adobo from the can, plus more for extra heat
  • ½ cup beef or chicken stock 120 ml
  • ¼ teaspoon sugar optional, balances the acidity

For the fresh chunky salsa

  • 1 large tomato cut into cubes (seeds left in)
  • ½ large red capsicum bell pepper, cut into cubes
  • ¼ red onion finely diced
  • 2 tablespoons chopped cilantro coriander
  • teaspoon salt
  • ¼ teaspoon sugar
  • Juice of ½ lime

Toppings

  • 2 cups shredded lettuce
  • 1.4 oz cheddar cheese finely grated, 40 grams
  • 3 tablespoons light sour cream optional

Instructions

  • Roast the potatoes. Preheat the oven to 200°C / 400°F. Lightly spray a flat baking tray with oil. Toss the cubed potatoes with the olive oil, Vegeta, smoked paprika, garlic powder and salt until well coated. Spread in a single layer on the tray and roast undisturbed for 25 minutes. Remove from the oven and scrape the potatoes off the tray with a flat spatula. Set aside.
  • Cook the taco meat. While the potatoes roast, heat 1 tablespoon of oil in a skillet over medium heat. Add the onion and salt, and cook until soft, golden, and translucent, about 5 minutes.
  • Add the garlic and ground beef, and bring the heat to medium-high. Break the beef up with a spoon or spatula and cook until it's changed color and the juices have started to release, about 4–5 minutes.
  • Stir in the tomato paste, chipotle in adobo, cumin, smoked paprika, oregano, and pepper. Add the sugar if using — it balances the acidity of the tomato paste nicely. Stir in the stock, bring to a simmer, and cook uncovered until the liquid reduces and clings to the beef. You want the sauce thickened and the beef glossy and slightly sticky — not completely dried out, since it will absorb a bit more sauce as it sits. Set aside.
  • Prepare the chunky salsa. While the beef cooks, chop the salsa ingredients. Combine the tomato, capsicum, red onion and cilantro with the salt, sugar and lime juice, and toss through. Set aside.
  • Assemble the bowls. Reheat the potatoes and beef if needed — pop the potatoes back in the oven for 5 minutes and reheat the beef on the stove or in the microwave. Start each bowl with a big scoop of roasted potatoes, top with the saucy taco meat, and arrange a handful of chopped lettuce on the side. Sprinkle with grated cheese, add a dollop of sour cream on top of the beef, and finish with the chunky salsa.
