This pomegranate dressing is a burst of sweet, tangy, and savoury goodness, all thanks to the magic combo of pomegranate molasses, honey, and fresh lemon juice. The olive oil adds a rich smoothness, while garlic brings a little bite.

Pomegranate molasses is packed with antioxidants, while the olive oil provides healthy fats. This dressing offers a lower-sugar alternative to many store-bought versions and is naturally gluten-free!

It’s super versatile and the best part is that it comes together in just a few minutes. Unlike your average dressing, this one has a unique tartness from pomegranate molasses—a must-try for anyone bored with store-bought dressings!

I always make this pomegranate dressing for this Persian salad and I love drizzling it over roasted veggies. It also happens to be an excellent marinade for chicken or pork chops!

  • Pomegranate molasses (acidity and sweetness), lemon juice (adds a more citrusy acid profile) and honey (or maple syrup for a vegan option).
  • Olive oil (substitute with avocado oil for a milder taste).
  • Salt, pepper and garlic for extra flavours.
  • About Pomegranate Molasses: This is a thick, tangy syrup made from reduced pomegranate juice. If you can’t find it, a mix of balsamic vinegar and a little honey or cranberry juice concentrate will give a similar flavour. This is the one I usually get.

Recipe Tips

  • Swap honey for maple syrup if you want to make a vegan-friendly version.
  • A teaspoon of Dijon mustard adds a nice bite and helps emulsify the dressing even more.
  • Add a dash of cumin or smoked paprika for a slight smoky flavour.
  • If it’s too thick, thin it out with a teaspoon of water or extra lemon juice.

Ingredients 

  • 2 tablespoons Pomegranate molasses see notes
  • 1 tablespoon lemon juice
  • ¼ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 teaspoons honey or maple syrup
  • 1 garlic clove grated or minced

Instructions

  • In a small bowl, whisk together the pomegranate molasses, lemon juice, olive oil, garlic, honey, mustard, salt, and pepper.
  • Pour the dressing over the salad or roast vegetables and toss everything together until well combined.
