  • 🔥 Flavor Profile: Sweet, jammy pumpkin, tangy caramelized onion, salty, melty cheese, buttery crisp pastry.

  • Best Served With: A crisp green salad, or as the centerpiece of a Halloween appetizer spread.

I set out to develop this one in the lead-up to Halloween because every year our street does a little pre-trick-or-treating party, and I wanted something to bring that wasn’t sweet. There’s no shortage of candy and sugary treats on Halloween afternoon, so a savory, shareable dish that still felt properly Halloween-themed was exactly the gap I wanted to fill.

This tart layers sweet, jammy roasted pumpkin (like butternut squash or kabocha), caramelized onion, and three kinds of melty cheese under a hand-cut pastry spiderweb. It’s a genuine showstopper on the table, but nowhere near as fiddly to make as it looks.

I’ve had a few testers with great feedback, so I highly recommend giving it a go. It was also very fun to make, and I am sure it will be a regular on our street party table.

PS. You can use this spiderweb pastry method for any kind of tart, or even for a quiche or a sweet version. If making a quiche with liquid filling, I recommend pre-baking the bottom crust slightly.

What You’ll Need

Here is what you’ll need for this Spiderweb Halloween Tart recipe. Find the full measurements in the recipe card below.

  • Butternut squash or Kabocha squash – roasts up sweet and jammy. Kent pumpkin in OZ, or Honeynut squash are all good here.
  • Brown onion – slow-cooked in butter until soft, then finished with a splash of balsamic to caramelize it slightly for extra depth.
  • Balsamic vinegar – used in the onion for a subtle tang that balances the sweetness of the pumpkin; I recommend aged Balsamic here.
  • Feta – adds a salty, tangy contrast to the sweet pumpkin and onion. You can use Greek or Danish, crumbly or smooth.
  • Cheddar – melts beautifully and adds a savory, slightly sharp backbone. A tasty/vintage cheddar works well.
  • Parmesan – for a nutty, savory finish, both through the filling and grated fresh over the pastry web.
  • Shortcrust pastry – holds a crisp, defined shape for the web better than puff, since it doesn’t puff apart into loose layers. Make sure to thaw it just until pliable rather than fully soft.
  • Egg – for the wash that gives the pastry its golden color and helps everything stick together.
  • Thyme and black pepper – simple seasoning that lets the pumpkin, onion, and cheese do the talking.
  • Black olives – sliced for the spider’s eyes. A fun, no-fuss finishing touch. Green olives will also work.

  • Lay the strips across the top in a spiderweb pattern — a few crossing through the center, then smaller pieces connecting them into a web.
  • Brush the web with egg wash, then build a spider from a few small pastry circles in the center, flattened slightly so they cook through evenly, with thin strips for legs and olive slices for eyes. Brush the spider with the egg wash as well.
  • Bake at 190°C (375°F) for 30–35 minutes until deep golden, especially across the top of the spider.
  • Rest briefly before slicing and serving.

Recipe Tips

  • Kabocha and butternut squash are interchangeable in this recipe — use whichever you have on hand or can find more easily. Both roast up sweet and hold their shape well once diced.
  • Flatten the spider’s body and head before placing them on the web. That’s the one spot with several stacked layers of pastry, so it’s the last part to cook through — rolling it a touch flatter helps it bake at the same rate as the rest of the tart.
  • Thaw pastry in two stages: keep the base sheet cooler and firmer since it just needs to be pressed into the tin, but let the second sheet soften a little longer in the fridge so it’s easy to cut into clean strips for the web.
  • Butter the tart tin lightly before lining, especially if it doesn’t have a removable base.
  • You can use this spiderweb pastry method for any kind of tart, or even for a quiche or a sweet version. If making a quiche with liquid filling, I recommend pre-baking the bottom crust slightly.
  • Make ahead: roast the pumpkin and caramelize the onion up to a day ahead and store in the fridge. Assemble and bake the tart fresh so the pastry stays crisp.
  • Storage: leftovers keep well covered in the fridge for up to 3 days. Reheat in the oven or air fryer to bring back some crispness rather than microwaving.

Serving Suggestions

This tart is great as a Halloween appetizer but is substantial enough to serve as a main with a simple green salad on the side. I love it as the centerpiece of a Halloween spread alongside smaller dishes.

Slice it into wedges for a sit-down dinner, or cut it into smaller squares if you’re serving it as part of a party spread. It’s just as good served warm from the oven as it is at room temperature, which makes it an easy one to have ready before guests arrive.

Ingredients

For the pumpkin:

  • 3.5 cups diced kabocha squash or butternut squash, unpeeled weight with seeds removed about 23 oz / 650 grams
  • 1 tablespoon olive oil
  • ⅔ teaspoon salt

For the onion:

  • 1 large onion sliced
  • 1 tablespoon butter
  • A few sprays of olive oil
  • ⅓ teaspoon salt
  • 1 tablespoon aged balsamic vinegar

For the filling:

  • 4 oz feta cheese crumbled (about 1 cup) / 120 grams
  • 2 oz cheddar cheese grated (about ½ cup) / 50 grams
  • 1.5 oz parmesan freshly grated (about ½ cup) / 40 grams
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • 1 egg
  • 1 tablespoon butter for greasing the tin

For the pastry and decoration:

  • 2 sheets shortcrust pastry
  • 2 black olives sliced (for the spider’s eyes)

Instructions

  • Preheat the oven to 200°C (400°F). Toss the diced squash with the olive oil and ⅔ teaspoon salt, spread on a tray, and roast for 25 minutes, until tender and jammy. Cool slightly out of the oven.
  • Meanwhile, melt the butter with a few sprays of olive oil in a pan. Add the sliced onion and ⅓ teaspoon salt, and sauté for 10-12 minutes until soft (stir every couple of minutes), adding the balsamic vinegar at the end to caramelize slightly.
  • Butter a tart tin (ideally with removable bottom) and line it with one sheet of shortcrust pastry, thawed just until pliable, patching the sides with offcuts for height if needed.
  • Layer half the cheddar, some of the feta, and some of the parmesan over the base, then sprinkle with the thyme and a little pepper.
  • Add the caramelized onion, then the roasted pumpkin, pressing down gently to compact slightly (it should be soft and jammy).
  • Top with the remaining feta, cheddar, and parmesan, plus the remaining pepper.
  • Whisk the egg and set aside for brushing.
  • Thaw the second pastry sheet in the fridge for about 20 minutes, then cut most of it (⅔) into thin strips (roughly ¼ inch / 0.5cm wide) on a lightly floured board.
  • Lay 4 strips crossing through the center to form 8 sections, then use small pieces of pastry to connect the strips into a spiderweb pattern across the top (see step-by-step pics or the video).
  • Brush the web with the egg wash.
  • From the remaining pastry, cut a few circles of different sizes and stack them in the center of the web to form a spider's body and head, flattening them slightly so they're not too thick. Add 8 legs of varying lengths from thinner strips, and press the olive slices onto the head as eyes. Brush the spider with egg wash as well.
  • Bake at 190°C (375°F) for 30–35 minutes until deep golden and crisp, especially across the top of the spider.
  • Rest briefly before slicing and serving.

Notes

Important Ingredient Tips: Kabocha and butternut squash can be used interchangeably in this recipe — both work well roasted and diced.
Key Recipe Tips: Flatten the spider’s body and head before baking so the layered pastry there cooks through fully. Thaw the base pastry sheet just enough to be pliable, and let the second sheet soften a little more in the fridge so it’s easier to cut clean web strips.
Storage Tips: Keeps well covered in the fridge for up to 3 days. Reheat in the oven or air fryer for the best texture.
Make-Ahead Tips: Roast the pumpkin and caramelize the onion up to a day ahead and store separately in the fridge. Assemble and bake the tart fresh.
FAQs:
Can I use puff pastry instead of shortcrust? Yes, though shortcrust holds a cleaner, more defined web shape since it doesn’t puff apart into loose layers the way puff pastry does. If you use puff, keep the strips a little wider so they don’t separate too much in the oven.
Is butternut squash the same as pumpkin here? For this recipe, yes — kabocha squash, butternut squash, and most pumpkin varieties will all roast up sweet and jammy and can be used interchangeably. Go for the sweeter, more starchy varieties.
Can I make this ahead of time? You can roast the pumpkin and caramelize the onion up to a day ahead. The tart itself is best assembled and baked fresh so the pastry stays crisp.
Can I freeze it? The baked tart can be frozen for up to 1 month. Thaw overnight in the fridge and reheat in the oven to crisp the pastry back up.
What can I use instead of feta? Goat cheese is a good substitute if you want a similar tang, or ricotta salata for something milder.
