Types of Summer Squashes (And Their Names!)

    • Green skin, yellowy but mostly white flesh, very small seeds.
    • Mild flavour and versatile in cooking, from grilling to baking.
      Most popular summer squash, I would say.
    • Often used in salads, stir-fries, and as a pasta substitute (hello, zoodles!).
  • Yellow Squash (US), Yellow Zucchini (AU), Yellow Courgette (UK)
    • Tender with a slightly sweet flavour. Bright yellow skin.
    • Great for grilling, sautéing, and adding to casseroles or soups.
    • Includes straightneck and crookneck varieties.
  • Grey Zucchini (US/AU), Grey Courgette (UK)
    • Also known as Middle Eastern or Lebanese zucchini, although it’s very popular in Mexico (known as “calabacita”) and is the more common squash in Eastern Europe (that’s the zucchini I grew up with in Ukraine).
    • Pale greenish-grey skin and a tender, mild-flavored white flesh. Compared to its green counterpart, grey zucchini has a slightly firmer texture but can also have larger seeds.
    • Great for stuffing, braising, frying, stir-frying and it can be eaten raw in salads.
  • Pattypan (US), Golden Squash (AU), Patty Pan (UK)
    • The prettiest of squashes. Small, round, and flat with scalloped edges and delicate flavour.
    • Ideal for stuffing, roasting, or slicing into salads.
  • Zephyr (US/AU/UK)
    • Hybrid of yellow with a green tip.
    • Best enjoyed grilled, sautéed, or sliced fresh in salads.
    • Has a mild, buttery flavour, and is similar to zucchini in texture.
