Saucy, gooey, chocolate self-saucing pudding desserts are insanely good and easy. It's a paleo, grain-free, sugar-free recipe from Get Merry Cookbook.

Ingredients 

FOR PALEO PUDDINGS

  • 1 egg whisked
  • ½ cup almond meal
  • ¹/₃ cup coconut milk canned, full-fat
  • ¼ cup raw cacao powder
  • 2 tablespoons coconut oil
  • 2 tablespoons honey or rice malt syrup
  • 1 teaspoon 100% vanilla extract
  • ½ teaspoon apple cider vinegar
  • ½ teaspoon baking powder gluten-free

FOR THE CHOCOLATE SAUCE

  • ¾ cup boiling water
  • ¼ cup raw cacao powder
  • 2 tablespoons honey or rice malt syrup
  • 1 teaspoon 100% vanilla extract

Instructions

  • Preheat oven to 180° C (350° F).
  • In a mixing bowl, combine all the pudding ingredients.
  • Transfer the mix into 2 x 10-cm (4-in) ramekins.
  • In another bowl mix together all the chocolate sauce ingredients until super smooth.
  • Carefully pour and divide the chocolate sauce evenly on top of each of the puddings.
  • Place into the oven for 25 minutes. Check and see if it’s cooked, let cool for a couple of minutes (if you can), then eat it all up!
