Zucchini Juice Tonic With Ginger & Lemon

Made with added ginger and lemon, this zucchini juice tonic is invigorating and immune-boosting and can be served as shooters or diluted with ice or water. Below is the recipe for two zucchini juice shooters but you can make a smaller or larger batch if you like. Vegan, gluten-free, paleo, keto, Whole30 (omit sweetener).

Ingredients 

  • 2 medium to large zucchini washed
  • 1 tablespoon grated ginger thumb-size knob
  • Juice of 1 lemon
  • 1 teaspoon maple syrup honey or stevia are also fine

Instructions

  • Method 1.
    Using a greater is a good way to make the juice and to use shredded zucchini to make fritters, muffins, cakes and quiches after. Use larger holes of a hand-held grater or a food processr. Wash the zucchini well and grate it together with the skin on.
  • Once grated, take a handful of the flesh in your hands and squeeze it over another bowl to catch all the juices. Set the flesh aside for further use. Continue with the rest of the zucchini and squeeze as hard as you can. You could also place the zucchini into muslin cloth, then twist it to squeeze the juice out.
  • To make ginger juice, I simply grate a knob of ginger (with the skin on) into the same bowl as the zucchini juice. I find about a tablespoon of grated ginger gives it a nice kick but you could start out with less ginger.
  • Cut the lemon in half and squeeze the juice into the bowl as well. Again, you can start out with less lemon juice for a milder version. This is especially important if you're sensitive to citrus juices.
  • Mix the juices well and strain through a sieve into a jug or a cup to filter out any zucchini piecesl, ginger flesh and lemon pips. Press any caught flesh in the sieve with your fingers or the back of the spoon to squeeze out any remaining juice.
  • Sweeten the zucchini juice tonic with a teaspoon or half a teaspoon of honey, maple syrup or other preferred sweetener and you're ready to drink it up. Feel free to dilute it with ice or some water, but I love it as is.
  • Method 2.
    You can simply use a juicer or a blender to extract zucchini liquid, especially if you're not planning to use the grated flesh in cooking. If you use the juicer, you will make more liquid than with grated zucchini. In this case, you can add more ginger and lemon juice or you might find that the ratios still work well.

Notes

Store this zucchini juice tonic for up to 3 days in an airtight container, jar or bottle in the fridge.
