Learn how to make a delicious, deli-style avocado turkey sandwich with sun-dried tomato aioli in the comfort of your kitchen. The recipe makes 2 sandwiches but you can scale it down or up easily.

Ingredients 

  • cup mayonnaise
  • cup sun-dried tomatoes finely chopped
  • 1 clove garlic minced or grated
  • ½ teaspoon smoked paprika
  • 4 oz. turkey slices
  • 1 avocado sliced
  • 1 cup arugula leaves, aka rocket
  • 4 slices sandwich bread

Instructions

  • Make the aioli first. Using a sharp knife, chop the sun-dried tomatoes very finely. Combine with mayonnaise, minced or grated garlic and smoked paprika.
  • Prepare the ingredients for the sandwich: slice the avocado, wash and dry arugula if needed, prepare the turkey meat. You can toast the bread or keep it fresh.
  • Layer the sandwich. Spread a generous amount of aioli on each bread slice of the sandwich. Top with a few turkey slices, we recommend enough slices to give you two layers. Follow with sliced avocado and a handful or arugula. Close the sandwich and slice in halves if desired.

Notes

To make 1 sandwich: 2-3 tablespoons mayonnaise, 2 tablespoons sun-dried tomatoes, ½ clove garlic, ¼ teaspoon smoked paprika, 2 oz. turkey, ½ avocado, ½ cup arugula, 2 slices of bread.
