Tasty, nutritious and easy, this baked rainbow trout with garlic butter and herbs is a versatile main that can be served with many side dishes. This trout recipe can be adapted to salmon fillets or white fish. It's gluten-free, low-carb and Whole30-friendly.
Preheat the oven to 175 C / 350 F. Line a baking dish with foil or parchment paper and place two rainbow trout fillets inside.
Mix salt and spices. Sprinkle over trout fillets.
Melt the butter and mix with chopped garlic. Spread on the trout fillet. Finely chop the dill and also sprinkle on the trout. Cover the top with foil or fold the parchment paper and bake for 15 minutes.
Then unfold the foil and bake the trout for another 5 minutes. After this, transfer the fish to a plate and serve with lemon wedges on the side. You can also add more butter and chopped dill.
