Cook’s notes

You can use any other whole fish like snapper barramundi instead of trout. While the fish is cooking in the oven, prepare a large mixed salad or pan-fry broccoli, carrots, cauliflower and snow peas with some coconut oil, garlic, chilli and lemon juice or white wine. I also add a dollop of butter at the end.

In addition to fish, you could also add some diced vegetables to the roasting tray around the fish. Something like whole shallots, carrots, cauliflower or sweet potatoes would work well. This Spanish pisto vegetable stew would also go well

Baked with shallot and herb salsa for a zesty, fresh flavour, this whole baked trout is quick and easy. This recipe is gluten-free, paleo, keto & Whole30. Serve with stir-fried veggies, salad and rice or quinoa.

Ingredients 

  • 2 whole trout fish, about 0.5 kg / 1 lb. each

For the salsa

  • 1 medium red onion peeled and roughly diced
  • A handful of fresh basil leaves
  • A handful of fresh parsley
  • A few mint leaves
  • 1 garlic clove peeled
  • Zest of 1 lemon
  • Juice of 1/2 lemon slice the rest to put on top of the fish
  • 1/2 cup olive oil
  • 2 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions

  • Preheat the oven to 200° C (390° F).
  • Combine the salsa ingredients in a food processor or a blender and process into a salsa-like consistency.
  • Place the fish fillets in a large roasting tray. Cover the fish with the herb marinade on both sides and a little inside the fish cavity. Add a few lemon slices on top of the fish.
  • Bake in the oven for 20-25 minutes, on the middle shelf. Remove and transfer to a platter or serve right in the roasting tray.

  1. Oh my god. Baked whole fish is the best. Nothing makes me feel more like a wolf girl than just pulling apart a whole fish for dinner. The cheek is the best bit! NOM!!!!

  2. What a beautiful dish! We had been given a large trout and I wanted to do something really special with it, and this recipe did just that. I served it with mashed cauliflower and parsnip and fine green beans. I forgot to add the mint and onion to the rest of the items that went into the processor, but chopped it finely and added to the surrounds of the fish. The fish got basted with the sauce. Still worked a treat.

  3. I surprised my husband with this. I bought the trout at Costco and did not know what to do with it. I do not like fish. But I did this recipe and he was amazed how good it looked. But the real test was the taste and he LOVED it. Thank you.

    We love this and make it several times a year. I’ve tried the salsa with other fish but it just isn’t as good. I’m always searching for interesting dairy free recipes. The trout is delicious!
