Easter Salads

Easter is a great holiday because it stands on its own. Thanksgiving and Christmas can easily turn into a stressful affair with one event right after the next. It could feel like you never stop cooking! Easter, on the other hand, is a welcome break to enjoy spring’s bounties, reconnect with friends and family, and indulge in chocolate bunnies at the egg hunt with the kids.

It’s also exciting because new veggies are at the market with the turn of the seasons (whether you’re going into spring or autumn), and as a result, everything on our plates is getting a little more bright and vibrant. Today, I want to share some of the best Easter salad ideas for you to serve at your holiday or other special events throughout this season.

I’ll be highlighting ingredients like peas, rocket (arugula), beets, and radish in addition to mayo-based salads and some dishes ‘off-the-beaten-path’ that even the Easter bunny would approve of.
